SIMPLE WILD RICE CASSEROLE 
Pour boiling hot water over 1 cup wild rice that has been washed. Let set 1/2 hour to "pop" it. Stir occasionally, then drain.

In a greased 2-quart casserole, add: 3 c. boiling water 4 tbsp. butter 2 cans drained mushrooms (or 1 lb. fresh mushrooms) 1 can sliced water chestnuts

Combine all and bake at 350 degrees for 1 hour, covered. Stir and continue baking 45 more minutes, uncovered.
