CHICKEN RICE DRESSING 
2 tbsp. all-purpose flour
2 tbsp. vegetable oil
1 c. onion, chopped
1 c. celery, chopped
1/2 c. green peppers, chopped
2 cloves garlic, minced
3/4 lb. lean pork
1 c. chicken, boned
1/2 lb. chicken giblets, chopped (optional)
2 tsp. black pepper
1/2 tsp. red pepper
1 c. chicken broth
3 c. hot cooked rice
Green onion tops for garnish

Brown flour in oil until deep red-brown, stirring constantly to prevent burning. Add onion, celery, green pepper, and garlic. Cook until vegetables are tender.

Stir in meats and seasonings. Continue cooking until meat loses its color. Blend in broth; cover and simmer 25 minutes. Stir in rice and cook 5 minutes. Mixture should be slightly moist. Sprinkle green onion tops over top. Makes 6 servings.
