CHRISTMAS CAKE 
1 c. pecan halves and pieces
1 (8 oz.) jar maraschino cherries
6 oz. semi-sweet chocolate chips
1 (8 oz.) pkg. dried dates (diced)
2 c. all-purpose flour
4 eggs
1 c. sugar
1/2 tsp. salt
1 tsp. baking powder

Drain and halve maraschino cherries, reserving two teaspoons of cherry juice. In a large bowl, mix pecans, cherries, chocolate chips and dates with one cup of flour.

In a smaller bowl, beat eggs and sugar together until creamy. Add one cup of flour, salt, baking powder, and cherry juice to the egg/sugar mixture. Pour this mixture over the pecan-cherry-date-chip dry mix and blend by hand until each piece is covered.

Pour mixture into a lightly greased microwave tube pan. Microwave on HIGH for 15 minutes, turning every five minutes. After cooling for 10 minutes, remove from tube pan. Using a sharp knife, slice the cake in 3/4 inch wide pieces. Serves 16.

Since microwave ovens vary in power, you may need to adjust your cooking time.
