POTATO PANCAKES 
2 eggs, slightly beaten
1 c. milk
1 tbsp. onion, finely chopped
1/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
3 c. raw potatoes (grated or riced)

Combine eggs, milk and onion. Sift in the dry ingredients. Beat until smooth. Fold in the potatoes. Put about 1 tablespoon shortening on grill and heat. Allow 1/3 cup mixture for each pancake. Fry over medium heat until brown and crusty on underside. Turn and finish cooking. Serve hot with applesauce. Makes about 16 pancakes.
