CHOOSE - A - GRAIN CASSEROLE 
1/2 c. chopped sweet green or red pepper
1/2 c. chopped onion
1/2 c. chopped celery or 1 (4 oz.) can diced green chilies, drained
1 clove garlic, minced
1 tsp. butter
1 1/2 c. cooked rice, bulgur, wheat berries, barley, Kashi, or combination of the above
1/2 (8 oz.) container (1/2 c.) soft style cream cheese
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground cumin, coriander, or dried basil, crushed
Milk
1/2 c. shredded Cheddar cheese

In a small saucepan, cook green or red pepper, onion, celery, and garlic in hot butter until tender. Meanwhile in a bowl, combine chili peppers (if using), cooked grain, cream cheese, salt, pepper, and spices. Stir in onion mixture. Transfer to a 1 quart casserole. Bake, covered, in a 375 degree oven about 25 minutes or until heated through. If mixture seems stiff, stir in a little milk to moisten. Sprinkle with cheese. Bake for 2 or 3 minutes more or until cheese melts.
