SPRING SALAD 
Mixed fresh greens (spinach, leaf lettuce, escarole, Butter lettuce, Iceberg not recommended)
1 sm. can mandarin oranges, drained
1 tbsp. fresh parsley, chopped
1/2 sm. red onion, cut in slivers
1 ripe avocado, cut in thin wedges
1 handful young wild violet leaves & blossoms (do not use if lawn is sprayed, do not use African Violets.) Wash carefully, blot dry gently on paper towels.
1/4 slivered almonds (optional)

Combine ingredients, dress with olive oil and herb or fruit (such as raspberry) vinegar. Other edible flowers include Redbud blossoms, pansies, and nasturtiums, but I prefer violets for this salad.
