RICE-SPINACH COMBO 
1/2 pkg. (10 oz. size) frozen chopped spinach
1 c. instant rice
1 1/2 c. milk
1 tsp. salt
1 tsp. instant minced onion
2 eggs, beaten

Place frozen spinach in 1 quart microwavable casserole. Cover and microwave on high (100%) until thawed, 3 to 4 minutes. Stir in remaining ingredients.

Cover and microwave 7 minutes; rotate casserole 1/4 turn. Microwave until knife inserted near center comes out clean, 2 to 4 minutes. Let stand a few minutes before serving. 5 or 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
