COLD SPINACH SALAD OR SPREAD | |
2 boxes frozen chopped spinach 3 hard boiled eggs, chopped 1/2 c. diced onion 1/2 c. diced celery 1 c. grated cheddar cheese DRESSING: 1 c. mayonnaise 1/2 tsp. salt 1/2 tsp. Tabasco sauce 1 1/2 tsp. vinegar 2 tsp. horseradish Thaw and drain spinach (squeeze as dry as possible). Mix with remaining ingredients. Stir in dressing, mixing thoroughly. Cover tightly and store in refrigerator. May be served as a cold vegetable salad with entree, especially broiled or baked fish; or as an appetizer spread on crackers. |
