CORN FRITTERS 
1 egg
1/4 c. milk
1 c. pancake mix
1 can (12 oz.) whole kernel corn, drained
Wesson oil, 1 inch deep in skillet

Blend eggs and milk. Add pancake mix, stirring until blended. Fold in corn. Drop by teaspoonfuls in hot oil. Cook until golden about 4 minutes. Good with syrup.
