RAISIN LUNCHBOX HERMITS | |
1/2 c. butter, softened 3/4 c. brown sugar, packed 1 egg 1/2 c. molasses or sorghum syrup 1 1/2 c. flour 1/2 tsp. of each: cinnamon, nutmeg and cloves 1/2 tsp. baking soda 1/4 tsp. salt 1 1/2 c. raisins 3/4 c. walnuts, chopped Lemon Glaze, opt. (recipe follows) In mixing bowl, cream butter and sugar until fluffy. Beat in egg, molasses; mix to blend well. Sift together dry ingredients and stir into creamed mixture. Stir raisins and walnuts in. Spread in greased 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 20 to 25 minutes until center is still soft but springs back to the touch. If desired, brush with lemon glaze while still hot. Cut into squares. LEMON GLAZE: Combine 2/3 cup sifted powdered sugar, 2 tablespoons lemon juice and 1 teaspoon lemon peel, grated. Mix to blend well. |
