COWBOY STEW 
1 (2-3 lb.) cubed round steak
1/2 c. flour
1/2 tsp. salt
1/4 tsp. pepper
1 sm. can diced Ortega chilies
1 clove crushed garlic
1 sm. chopped onion
1 (15 oz.) can drained pinto or kidney beans

Mix flour, salt and pepper. Dredge cubed round steak in flour and brown in hot lard or shortening. Add remaining ingredients. Stir well and add enough water to make a bit of gravy. Simmer about 15 minutes. Serve with warm tortillas.
