PINEAPPLE DELIGHT | |
2 c. vanilla wafers, crushed 1/4 c. melted butter 1/2 c. butter 1 1/4 c. confectioners' sugar 1 egg 1 tbsp. pineapple juice 1/2 pt. heavy cream 1 can crushed pineapple Maraschino cherries Combine vanilla wafer crumbs and melted butter. Put aside 1/2 cup for top. Press remainder in 9 x 12 inch pan. Cream 1/2 cup butter; add sugar, then egg. Beat. Add pineapple juice and spread over crumbs. Whip cream; add drained pineapple. Spread over mixture in pan. Sprinkle crumbs on top and decorate with cherries. Place in freezer. Remove and place in refrigerator 3 hours before serving. |
