1 c. cracked wheat (fine) 1 c. warm water 3 firm tomatoes 2 cucumbers 6 to 8 radishes 1 bunch green onions 1 bunch parsley 3 tbsp. finely chopped Mint leaves or 1 tbsp. dried mint flakes 1/2 tsp. cumin seed Salt & pepper to taste Juice of 1 lemon 1/2 c. olive oil Soak wheat in warm water. Set aside. Finely chop all vegetables, drain any excess water. Press cracked wheat between palms to remove any excess water. Add cracked wheat to finely chopped vegetables, mix. Add mint, cumin, salt and pepper, mix. Add lemon and olive oil. Toss all ingredients together. Serve in lettuce cups. Serves 6. |
