MEAT - POTATO QUICHE 
3 c. shredded raw potatoes
3 tbsp. oil
1 c. grated cheese (Swiss or cheddar)
3/4 c. cooked chicken (or ham or browned sausage)
1/4 c. chopped onion
1 c. evaporated milk (or cream)
2 eggs
1/2 tsp. salt
1/8 tsp. pepper

Press potatoes and oil into pie crust shape. Bake for 15 minutes or until just beginning to brown. Remove from oven. Layer on cheese, meat and onion. In bowl, beat milk, eggs, salt and pepper. Pour egg mixture over other ingredients. Return to oven for 30 minutes or until lightly browned and knife inserted comes out clean. Cool 15 minutes before cutting. Serves 4 to 5.
