MELBA'S SQUASH CASSEROLE 
1 qt. squash, drained
1 qt. stewed tomatoes, some water
3/4 c. rice
1 c. sharp cheddar cheese
1 med. onion
Dash of salt and pepper
Parsley

Simmer onions, tomatoes, squash, salt and pepper. Add parsley. Pour in rice and let cook until tender. Add cheese. Serve when cheese is melted.
