SWEET POTATO CASSEROLE 
4 to 5 med. sweet potatoes
1 can crushed pineapple in its own juice
1/2 pkg. marshmallows, mini or lg.

Boil sweet potatoes until soft. Mash thoroughly. Mix whole can of pineapple including the juice with the potatoes. Pour mixture into a buttered pan, Corning Ware or Pyrex is best. (Non-stick coating sprays can be used to coat the pan if desired.)

Before baking arrange the marshmallows on the top of the potatoes. Bake in 400 degree oven for 20 minutes.

Slivered almonds can be substituted for the marshmallows.
