SWEET POTATO CASSEROLE 
4-6 med. to lg. sweet potatoes, peeled
1 8-oz. can crushed pineapple, drained
1 11-oz. can mandarin oranges, drained
1/4 c. brown sugar
1 tbsp. butter
Miniature marshmallows

Cook sweet potatoes in a small amount of water until tender; drain and mash. Add, by gently stirring, pineapple, oranges, brown sugar, and butter.
