SWEET POTATO CASSEROLE 
4 c. cooked sweet potato, mashed
1 tsp. salt
1/8 tsp. cinnamon
1/4 c. brown sugar
2/3 c. drained, crushed pineapple
1/2 c. flaked coconut

Combine sweet potatoes with salt, cinnamon, brown sugar, half the pineapple, and 2 tablespoons butter. Beat well. Place in a 1 1/2 quart casserole and spread remaining pineapple with coconut. Bake in moderate oven (375 degrees) until heated through, about 30 minutes.
