POTATO SOUP 
6-7 potatoes
Onion
Bacon or ham
Parsley
Paprika
Salt and pepper
1/4 c. butter
3 tbsp. flour
1/2 c. milk
2/3 c. sour cream
1 1/2 c. Cheddar cheese

Dice potatoes and cover with water. Simmer until tender. Add bacon (cooked) pieces, parsley, paprika, salt and pepper to taste. Simmer 30 minutes to 1 hour.

WHITE SAUCE:

1/4 c. butter
3 tbsp. flour
1/2 c. milk

Stir until thick and creamy. Add to potatoes. Stir until well mixed. Add sour cream and cheese. Stir until melted and creamy.
