POTATO SOUP 
THIN WHITE SAUCE:

1 1/2 tbsp. butter
1 1/2 tbsp. flour
3/4 tsp. salt
1 1/2 c. milk

Melt butter and add flour slowly. Then add milk slowly while stirring constantly.

SOUP:

1 1/2 c. white sauce
1 1/2 c. diced potatoes (raw)
1/2 c. water
2 tsp. minced onions
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. celery salt

I generally use fresh onions and celery. Place these two ingredients along with the salt and pepper in the water and cook for about 10 minutes. Cook diced potatoes separately and drain (to eliminate the starch). Combine all ingredients including the liquid in which you cooked the onions. If soup is too thick add a little water (or milk). Optional: finely chopped ham can be added.
