TERRY'S STUFFED PUMPKIN WEDGES | |
1 sm. pumpkin 1 chopped onion 2 c. chopped shrimp, fish, or meat 2 tsp. bacon drippings 1 lg. tomato, finely chopped clove of garlic, minced Thyme Nutmeg (a pinch) Parsley 2 bay leaves 1 c. dry bread crumbs 1 egg, well beaten Salt and pepper Simmer pumpkin, whole, for 45 minutes (or until tender). Quarter it, remove the seeds, and scrape the pulp from shell. In heavy pot, saute onion and fish or meat in bacon drippings. Add tomatoes and seasonings. Mix the pulp with bread crumbs and egg. Salt and pepper to taste. Add to pot and cook 10 minutes, stirring constantly. Place mixture on pumpkin shells and sprinkle with more buttered crumbs or crumbs with cheese added and bake at 350 to 375 degrees until lightly browned. |
