ZUCCHINI WITH BALSAMIC VINEGAR 
2 zucchini (about 1 lb.)
5 spring onions, chopped
2 tsp. oil
2 tbsp. balsamic vinegar
2 tbsp. chopped fresh mint
2 tbsp. chopped fresh parsley
1/2 tsp. salt
Pepper to taste
2 tbsp. sliced almonds

Cut zucchini into 1 1/2-inch long strips. Toss the zucchini and onions and spread in a microwave-safe dish. Cover loosely with plastic wrap and microwave for 5 minutes on high.

Cool 2 minutes then toss with other ingredients. Sprinkle with almonds and serve warm to room temperature.

Since microwave ovens vary in power, you may need to adjust your cooking time.
