WALNUT COFFEE CAKE 
1 1/2 c. flour (unbleached white)
2 tsp. baking powder
1/2 tsp. salt
3/4 c. brown sugar
1/4 c. shortening, butter
1/2 c. milk
2 unbeaten eggs

Sift flour with baking powder and salt and blend in sugar. Add shortening and milk and beat 300 strokes. Add eggs and beat 2 minutes.

TOPPING:

2 tbsp. melted butter
1/2 c. brown sugar
1 c. walnuts, cut up
1 tbsp. flour
1 tsp. cinnamon

Combine butter and sugar and add walnuts, flour and cinnamon; mix well. Spread 1/2 of batter on bottom of greased pan and cover with 1/2 of topping mixture then repeat. Bake at 350 degrees for 30 minutes. 9" square pan, serves 4 to 6.
