Mix together and set aside: 2 c. flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 1 tsp. nutmeg Beat together until fluffy: 4 eggs (1 carton egg substitute) 1 1/2 c. sugar 1 c. vegetable oil 1 (1 lb.) can pumpkin (2 c. squash) Add flour mix. Blend well. Pour into ungreased 10 x 14 x 1 inch jelly roll pan. Bake 25-30 minutes at 350 degrees. Cool completely. CREAM CHEESE FROSTING: 1 sm. pkg. cream cheese 1 stick softened butter 1 tsp. vanilla Beat well and add enough powdered sugar for smooth spreading. Delicious alternative to pumpkin pie. |
