SWEET AND SOUR PORK 
Cubed pork (3 lbs. for 8 servings)
Salt and pepper to taste
Flour
1/4 c. butter, melted

Dredge pork in seasoned flour and brown in butter. Place in 9 x 13 inch baking dish. Set aside. 2 tbsp. cornstarch 1/2 c. sugar 1/3 c. soy sauce 1/4 c. vinegar

Set aside pineapple chunks. Combine cornstarch and sugar, add pineapple juice, soy sauce and vinegar and stir until smooth. Cook until sauce is clear, stirring constantly. Pour sauce over meat. 1/3 c. sweet pickles, chopped

Place green pepper and pickles on top of meat. (Can be refrigerated bake a little longer). Bake one hour at 350 degrees. Add pineapple chunks to meat and bake additional 15 minutes.
