BERRY PUDDING | |
1 lg. egg, beaten 3/4 c. sugar 2 heaping tbsp. shortening or bacon grease 1/2 scant c. water 1 c. flour 2 tsp. baking powder 1 tsp. vanilla Approx. 2 c. sweetened berries or sliced fresh fruit (peaches or plums, etc), whatever you like Cream egg and sugar. Cream in shortening, water, flour, baking powder and vanilla. Grease 9 inch tin. Pour in a thin layer of batter. Cover with layer of slightly floured berries or fruit, slightly rounded. Pour rest of batter on top. Bake t 350 degrees for 45 to 50 minutes or until brown. Eat it warm or cold. Good with cream or half and half. |
