SWEET AND SOUR CABBAGE SOUP 
3 potatoes, scrubbed
1 head red cabbage, shredded
4 diced carrots
1 lg. onion, chopped
2 c. chopped celery
3 whole tomatoes, diced
1 (16 oz.) can sauerkraut
1/4 undiluted frozen apple juice concentrate, thawed
1/2 c. cider vinegar
Garlic powder and celery seed to taste
10 c. water

Bring water to a boil. Add all the ingredients and bring to a boil again; simmer covered for about 40 minutes, thinning with water when necessary. Serve hot garnished with sour cream and green onions. Serves about 12.
