SUMMER SAUSAGE 
5 lbs. hamburger
2 1/2 tsp. mustard seed
1/2 tsp. garlic powder
5 tbsp. Morton's Quick Cure salt
2 tsp. coarse black pepper
1/4 to 1/2 tsp. liquid smoke

Mix all ingredients together for 4 days. Store in the refrigerator. Each day for 5 days, uncover and knead; return to refrigerator.

At the end of 5 days, shape into balls (or rolls). Place on broiler pan. Bake at 150 degrees for 4 hours. Turn and bake 4 more hours. Cool and wrap in foil. Freeze. Makes 5 rolls.
