SUMMER CORN SALAD 
1 16 oz. pkg. frozen corn (thawed)
1 sm. sweet onion (chopped)
1 lg. tomato (seeded and chopped)
1 lg. green pepper (chopped)
1/4 c. mayonnaise
1/2 tsp. salt
1/2 tsp. coarse black pepper
1/4 c. cucumber (chopped)

Stir together corn and next 6 ingredients in a bowl - cover and chill 2 hours.

Top each serving with chopped cucumber.

Yields 5 cups.
