SUBSTITUTE 
When a recipe calls for...

Butter, shortening or oils (in baking) - substitute - Mott's Natural Apple Sauce.

1 cup whole milk - substitute - 1 cup skim or buttermilk.

1 cup heavy cream - substitute - 1 cup skim evaporated milk.

1 cup sour cream - substitute - 1 cup plain low fat yogurt, or a low or nonfat sour cream alternative.

1 whole egg - substitute - 2 egg whites or 1/4 cup egg substitute.

1 ounce cream cheese - substitute - 1 ounce Neufachatel or "light" cream cheese.

1 ounce whole ricotta cheese - substitute - 1 ounce part skim ricotta cheese or 2% low fat cottage cheese.

1 ounce regular cheese - substitute - 1 ounce fat free or low fat cheese with 5 grams of fat/ounce.

1 ounce baking chocolate - substitute - 3 tablespoons cocoa and 1 tablespoon oil.

1 cup mayonnaise - substitute - 1 cup low or fat free mayonnaise.
