TOMATO RELISH 
12 onions, diced
2 bunches celery, diced
2 green peppers, diced
1 red pepper, diced
1 peck ripe tomatoes, diced
1 c. salt
1 qt. vinegar
6 c. sugar
1 tbsp. cinnamon
1 tbsp. cloves
1 tbsp. ginger
1 tsp. allspice

Combine the vegetables in a large container and add the salt. Let stand overnight and drain. Combine the vinegar, sugar and spices and add to the vegetable mixture. Bring to a boil, then pack in hot sterilized jars and seal.
