SPANISH RICE | |
3 c. rice, uncooked 1 1/2 qt. water 10 slices bacon, chopped, uncooked 1 1/2 c. onions, chopped fine 2 qt. tomatoes, canned, chopped, drained 1/4 c. green peppers, chopped 1/2 tsp. black pepper 1/4 c. pimentos, chopped 1 tbsp. salt Add rice to water and bring to a simmer. Stir once and cover with a tight lid. Simmer rice 12 minutes without removing lid. Saute bacon and onions until bacon is cooked. Combine all ingredients and cook slowly, stirring frequently about 20 minutes until done. Protein 3.1 gm; Cho 22.3 gm; Fat 1.7 gm; Kcal 117; Sodium 427 gm; Dietary fiber 1.5 gm. 1/2 cup per serving; 25 servings. |
