SPANISH RICE 
3 c. rice, uncooked
1 1/2 qt. water
10 slices bacon, chopped, uncooked
1 1/2 c. onions, chopped fine
2 qt. tomatoes, canned, chopped, drained
1/4 c. green peppers, chopped
1/2 tsp. black pepper
1/4 c. pimentos, chopped
1 tbsp. salt

Add rice to water and bring to a simmer. Stir once and cover with a tight lid. Simmer rice 12 minutes without removing lid. Saute bacon and onions until bacon is cooked. Combine all ingredients and cook slowly, stirring frequently about 20 minutes until done.
