HAM AND SAUSAGE JAMBALAYA | |
1 tbsp. vegetable oil 20 oz. kielbasa sliced 1/2 inch thick 2 lg. onions, chopped 1 green pepper, chopped 3 ribs celery, chopped 2 cloves garlic, minced 3 c. chicken broth 1 can (16 oz.) whole peeled tomatoes in juice 1/2 lb. cooked ham, cut in cubes (undrained) 1 bay leaf 1 1/4 tsp. hot pepper sauce 1/2 tsp. whole all spice 1 1/2 c. uncooked long grain rice Heat in oil in a heavy skillet; add kielbasa, onions, green pepper, celery and garlic; cook until vegetables are tenderr. Add chicken broth, tomatoes, ham, bay leaf, hot sauce, thyme and all spice. Simmer uncovered 15 minutes. Bring to a boil, add rice. Cover, reduce heat, simmer 15 minutes. If necessary, add more broth or water and cook 5 to 15 minutes longer until rice is tender. Makes 4 to 6 servings. |
