COFFEE BLONDE BROWNIES 
1 lb. dark brown sugar
3/4 c. butter (1 1/2 sticks)
2 tbsp. instant coffee
1 tbsp. hot water
2 eggs
2 tsp. vanilla extract
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt, optional
1 c. chopped pecans or walnuts
1 c. semi-sweet chocolate bits

Heat sugar and butter in saucepan until butter melts. Dissolve coffee in hot water and add to sugar mixture. Cool to room temperature. When cool, beat in eggs and vanilla. Sift flour, baking powder and salt; stir into sugar mixture. Stir in nuts and chocolate bits.

Spread batter in greased 8 x 11 inch pan or 9 x 13 inch pan. Bake 25-30 minutes in 350 degree oven. Note: These are easy to overcook so watch carefully. Cool completely before cutting.
