DOUBLE APPLE MUFFINS 
1 1/3 c. flour
1 c. oats
1/3 c. brown sugar
1 tbsp. baking powder
1 tsp. nutmeg
2 tsp. cinnamon
1/2 tsp. salt
1 egg, beaten
1/4 c. vegetable oil
2/3 c. milk
1/3 c. apple juice or cranberry juice
3/4 c. peeled, chopped apples
Chopped nuts (opt.)

Combine dry ingredients. Beat egg, oil, milk and juice; then blend into dry ingredients just until moistened. Fold in apples and nuts. Bake in 400 degree oven for 20 to 22 minutes. Makes 12 medium.
