2 c. Bisquick baking mix
1/2 tsp. cinnamon
1 egg
1 1/3 c. milk
3/4 c. apple, grated (about 2 med. apples)
Cider Sauce (below)

Beat all ingredients together, except apples and sauce, until smooth. Stir in grated apple. Grease griddle as necessary. Pour batter into hot griddle, turning when bubbles appear on surface. Serve with warm Cider Sauce. Makes 18 (4-inch) pancakes.

CIDER SAUCE:

1 c. sugar
2 tbsp. cornstarch
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 c. apple cider
2 tbsp. lemon juice
1/4 c. butter
