SUGARLESS DATE COFFEE CAKE 
1/3 c. mashed ripe bananas
3 lg. eggs
1 1/4 c. water
1 tsp. baking soda
1 1/2 c. chopped dates
1/2 c. softened butter
1 tsp. vanilla
3 c. plain flour
2 tsp. baking powder

TOPPING:

1/3 c. chopped dates
1/3 c. flaked coconut
1/3 c. chopped walnuts

Beat together bananas and butter until creamy. Add eggs, vanilla and water and beat again. Add flour, baking powder and soda and beat well. Stir in chopped dates. Spoon batter into a greased and floured 9"x13" baking pan. Spread batter even in pan. Combine topping ingredients and spread on batter. Bake at 350 degrees for 20 to 25 minutes until knife comes clean.
