CREAMY PASTA SAUCE WITH FRESH
HERBS
 
1 1/2 c. heavy cream
4 tbsp. sweet butter
1/2 tsp. salt
1 c. finely chopped basil, mint, chives and parsley
1/4 tsp. grated nutmeg
Pinch cayenne
1/2 c. Parmesan
1 lb. angel hair pasta

Combine the cream, butter, salt, nutmeg and cayenne in a heavy saucepan and simmer for 15 minutes, until thickened. Whisk in the Parmesan and the herbs and simmer another 5 minutes. Correct for seasoning and serve immediately.
