ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla
2 c. peeled grated zucchini squash
3 c. flour
1 tsp. salt
1 tsp. baking powder
1/2 tsp. cinnamon
1 c. nuts (optional)

Beat eggs, sugar, oil and vanilla. Add zucchini, then add flour sifted with salt, baking powder and cinnamon. Add 1 cup nuts (more or less).

Bake in two greased and floured loaf pans for 1 hour or until done at 350°F. If using glass pans, reduce oven temperature to 325°F.
