VEGETABLE BREAD 
1 1/2 c. diced carrots (or zucchini squash or other vegetable)
1 c. salad oil
1 1/2 c. sugar
3 eggs
1/2 c. water

Combine the above ingredients. Add:

2 1/2 c. flour (1/2 wheat and 1/2 white)
3/4 tsp. salt
3/4 tsp. baking powder
3/4 tsp. baking soda
1 1/2 tsp. cinnamon
3/4 c. nuts (optional)

Bake at 350 degrees for 25-30 minutes or until done.
