CHICKEN AND SAUSAGE JAMBALYA 
1 fryer (approx. 3 lbs.)
1 1/2 lbs. smoked sausage
1 lg. onion chopped
1 1/2 c. chopped green onions
1 1/2 c. chopped parsley
1 c. chopped bell pepper
1 c. chopped celery
1 c. uncooked rice
Salt, red and black pepper
3 tbsp. Kitchen Bouquet

Put fryer parts in pot deep enough to cover meat and onion with water and set to boil until fryer is almost done. Remove meat from pot and retain water. Debone. Put in fryer, sausage (cut in bite size) in medium roaster.

Add rest of ingredients including raw rice, add seasonings to season well. Mix all this real well in roaster - add fryer, onion and water. Bake in oven at 375 degrees. Stir occasionally and bake until rice is tender. May add more water if needed. Serve hot with green salad.
