CHICKEN STEW WITH RICE 
1 lg. onion
1 lg. green pepper
2 cloves garlic
1/2 c. chopped ham or sausage
28 oz. tomatoes
1 c. raw rice
1 tbsp. oregano
1/4 tsp. ground cumin
Salt to taste
Pepper to taste
3 lb. fryer, cut up

Chop onion and green pepper and mince garlic; put in a large deep pot. Add ham or sausage, tomatoes, bay leaf, oregano, cumin, salt, pepper and 3 1/2 cups water. Add chicken. Bring to boil; cover pot and cook over low heat for 45 minutes. Raise heat, add rice to pot and return stew to boil. Cover pot, lower heat and simmer until mixture has consistency of thick soup.
