RICE PUDDING 
1 qt. milk
1/2 c. rice
1/2 c. raisins
1/4 tsp. salt
2 eggs
1/2 c. sugar
1 tsp. vanilla

Pour milk into top of double boiler, bring to boil. Add salt, rice, and raisins. Cook until rice is tender. Do not over cook. Beat eggs in bowl add sugar, vanilla. When rice is cooked, slowly add rice mixer back into top of double boiler stir slowly until mixture thickens 3 to 5 minutes. Pour in serving dishes. Sprinkle with cinnamon or nutmeg if desired.
