COD AU GRATIN POACHED FISH 
1 med. onion
3 slices lemon
3 sprigs parsley
1 bay leaf
1 tsp. salt
2 peppercorns
1-2 lb. fish

CHEESE SAUCE:

1 tbsp. butter
1 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk
1 c. American cheese

In large skillet, heat to boiling 1 1/2 inches water with onion, lemon slices, parsley, bay leaf, salt and peppercorns. Arrange fish in single layer in skillet. Cover, simmer 4 to 6 minutes or until fish flakes easily with fork.

CHEESE SAUCE: Melt butter in medium saucepan over low heat. Blend in flour and seasonings. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.

Stir 1 cup shredded process American cheese into hot cream sauce. Cook, stirring constantly, until cheese is melted. Place fish in baking dish and pour sauce over fish. Top with 1/4 cup sharp Cheddar cheese, shredded, and put in oven and bake 20-30 minutes at 350 degrees.
