MICROWAVE BELL PEPPER DRESSING 
1 green or red bell pepper
1/2 c. buttermilk
1 tsp. fresh parsley (opt.)
2 tsp. sugar
3/4 tsp. lemon juice
1/8 tsp. each salt, pepper, onion powder
1/4 tsp. paprika

Poke bell pepper with holes and microwave for 5 minutes on high. Cut pepper in half; remove seeds. Pat dry. In blender or food processor, blend all ingredients together. Chill. Serve over a green salad.

Since microwave ovens vary in power, you may need to adjust your cooking time.
