GREEN PEPPER LOAF 
1/4 c. butter
3 c. sliced onions
1 lg. green pepper, sliced in strips
1/2 tsp. salt
2 lbs. ground chuck
2 c. soft bread crumbs
2 eggs
2 tsp. salt
1/8 tsp. pepper
1/4 c. ketchup

Heat oven to 375 degrees. Melt butter in large skillet over medium heat. Add onions, green pepper, and 1/2 teaspoon salt. Saute until tender, stirring frequently. Combine onion-pepper mixture, chuck, bread crumbs, eggs, salt, pepper, and ketchup. Mix gently but thoroughly. Press mixture into greased 9 x 5 x 3 inch loaf pan. Meat loaf may be baked in the pan or turned out into greased, shallow baking pan. Bake 1 hour. Makes 6 to 8 servings.
