GREEK RICE (PILAF) 
1 c. UNCLE BEN'S® rice
3/4 cube butter
1 tsp. salt
2 1/2 c. chicken broth (can be either homemade or canned; if canned, eliminate salt

In a large skillet, melt 4 tablespoons butter, add rice and brown for 2-3 minutes. Add lemon juice and pour into boiling chicken broth. Let cook approximately 20 minutes. Do not keep stirring as rice will become mushy. Brown the rest of the butter and pour on cooked rice. Let set for about 5 minutes. Stir and serve. Serves 4.
