PARSLEY SAUCE 
1/4 c. butter
1/4 c. flour
1/2 tsp. salt
2 1/2 c. milk
2 tbsp. chopped parsley
3/4 tsp. grated lemon rind

Melt butter in saucepan; blend in flour and salt. Remove from heat, stir in milk. Heat to boiling, stirring constantly. Boil and stir one minute. Stir in parsley and lemon rind. Serve with casseroles. Makes 6 servings.
