1 1/2 lb. ground beef 1 green pepper, chopped 1 med. onion, chopped 3 stalks celery, chopped 1 (15 oz.) can plum tomatoes, cut fine and juice 1 can cream of mushroom soup 1 1/2 c. shredded Cheddar cheese 6 oz. med. noodles, cooked Fresh mushrooms, sliced (optional) Salt and pepper to taste Brown ground beef first. Add celery, onion, pepper, and tomatoes with juice. Simmer for 45 minutes to 1 hour. Add mushroom soup, mushrooms, and cheese. Simmer 15 minutes until cheese is melted. Add salt and pepper to taste. Add cooked noodles and mix well. Serves 8. Better cooked ahead and great the next day. |
