POTATO PANCAKES 
4 c. ground potatoes
6 slightly beaten eggs
1/2 c. evaporated milk
1 tsp. baking powder
1 tsp. salt
1/2 c. flour

Mix together with rotary beater. (I use a big spoon and mix well.) Put on well greased griddle to fry.

NOTE: Batter will fill a 4 quart mixing bowl. I make this recipe and whatever I don't eat I put in a bread bag and freeze. Next time I eat them I put them in the microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
